There are several solutions for a site disaster recovery.
The more simple (but slower) is use backup: restore your VM on another ESX.
The best solutions are based on replication technologies: you can do it at storage level (but could be expensive) or application level.
For storage based replication a good choice is use also VMware SRM to manage the failback and failover.
