How do I create a backup of one of my Vms, and then download the backup files down to my local disk?
If you are running a windows os get a copy of winscp. Log into your SSH service with winscp and get the folder of your vm in the right hand window and select download from the right mouse click menu. you can also drag the folder to a folder in an open instance of windows file explorer. Be prepared for it to take a long time. you can run it in the background if you want.
How do i find my SSH IP on my Vsphere?
The same as login via web pages, for example if you log in via web browser https://vcenter.mycompany.local,
you must run "winscp" software and enter the same adres vcenter.mycompany.local,
or via ip addres.
How to check IP adres - find in Google (in CMD , ping vcenter.mycompany.local should display ip addres)

But when i try to use the login via SSH, it says SSH is not enabled.
How do i enable SSH?
You can export the VM as ovf template by following the steps given below,
Login to vSphere web client. Click on Hosts & Clusters.
Choose the correct Virtual machine which you want to export.
Right Click on virtual machine > Template > Export OVF Template.
Export OVF Template wizard will open :- First provide the name.
And don't forget GhettoVCB.

You could install veeam backup & replication "community edition" and create full/incremental backups to a NAS or local storage on a backup machine on a scheduled basis. Veeam connects to the host.
Another option is to install veeam agent (for windows) on the guest operating system and have that backup to a NAS or USB drive
The VM is running so the "Export template is grey"
Exporting VM template as backup is fast but you lose options for backup so you can try ghettoVCB or other solution like Vinchin Backup & Recovery to improve backup plan.
