Is the "Start and stop with host" startup strategy the right choice for set the SLPD service as described here to bypass SLPD service vulnerability ?

I think it is better to choose "Start and stop manually".

What do you think about ?

I think you should upgrade to ESXi 7.03 or higher and not worry about this, but to answer the question. Manually

With host means it will start when the host reboots
