is it a local data store or Shared one ( SAN / NAS / iSCSI -  LUN )

If it is local please reboot the server , login to raid controller menu and  check the raid status  . if everything looks fine , boot in to OS and check .

If the data store showing offline mode , Re scan it , refresh and try to mount  .

Share Storage  -  Check on the storage as showing the LUN in healthy mode and it is connected to host .

move server in to maintenance mode  , reboot  .

If the data store showing offline mode , Re scan it , refresh and try to mount .

Once DS is available you can register  the VM

that usually means that the volume is not detected as a VMFS-partition.
It would be useful to get the results of partedUtil getptbl
