Is there a way to disable access or totally hide the client machine drives while logged into the virtual desktop via the View Connection Broker?

Yes, there is a way. You have to configure a policy in the Active Directory or on the local client....
I would choose the centralized way with the Active Directory ... Put your virtual desktops all in a OU and apply a GPO on that.
