Hello,
i work on a physical machine Dell Dual-QuadCore 2,26 Ghz with ESX 3.5.
In the VM features, i can choose how many virtual processors can be assigned to a single VM: 1, 2 or 4.
How can i obtain the best performances? I noticed that not always i have the greatest performance setting 4 virtual processor...

you will find that best practice starts with just adding a single vCPU, and if needed go up to 2vCPU's. Having 4vPCUs in a VM, in my opinion, isn't going to give you better results.
remember that 1 vcpu run on 1 core. if you've got 4 cores and one 4 vcpu you've got all 4 cores occupied worse case. this means that any other operation needs to fight for his turn. When you've got multiple vm's running and 1 4vcpu core there will be a lot of fighting.
