Memory usage and other resources of a virtual x64 machine

I recently upgraded from GSX Server to ESX 3.5iu3 Server.

Great product, really good. Much better performance, much better.

I upgraded Windows 2003 64bits, with Exchange 2007, and SQL 2005 64bit, and i assigned 4gbit of memory

Now tells my machine the memory usage:

Windows Server 2003 Standard x64 Edition Memory Granted (Average) KB 3932216 3932216 3932216 3932222

Windows Server 2003 Standard x64 Edition Memory Active (Average) KB 503316 713028 335544 491896,4

What is my maximum usage of the host system ?

Is that 713.028kb or is it really 3.932.216kb ?

The machine is a Q6600 (core2quad LGA775) with 8gb of memory.

Of course i would like to reduce my memory and cpu usage for the machine.

We work with 5 employees at the test center here.

And can i reduce maybe the host machine to 2 cores instead of the current 4 cores ?

What is best for 64bits server ?

I now a lot of questions. But a reaction is appreciated.
