Can SRM 5 (with vCenter 5, ESXi 4.1u1) paired with SRM 4 (vCenter 4.1 and ESXi 4.1u1)

Sorry, that is not possible - both the sites must be at the same version.

I would say no - looking at the upgrade section of http://www.vmware.com/pdf/srm_admin_5_0.pdf it talks about all sites needing to be upgraded there is no mention of interoperability
