The uplinks themselves can be considered "trunked". If a certain VLAN will be tagged or not going out of the N-VDS to the network is defined on your segments, where you can configure the desired VLAN IDs. The Transport VLAN is the VLAN ID of the network used for TEP. It is this tag (if not zero) that will be applied to packets from the host's TEP vmk interface.
Yes, edge uplinks support trunk ports. As far as what VLAN ID should be assigned, that highly depends on you and your infrastructure. You might want to spend some time reading the NSX-T docs to understand the purpose of those T0 uplinks.
