Is there any way to see hardware specifications, e.g. motherboard model, RAM specs via vcenter or vsphere or the ESXi interface? i couldn't find that.
run smbiosdump. grep cpu, memory, NIC... to filter output if needed

You can see some info from the host and the hardware it is using from vCenter by going to ESXi host -> Configure -> Hardware. Most information that you are requesting is present there.
You can also go to ESXi Host -> Monitor -> Hardware Health to see all health sensors from the ESXi host, including Memory DIMM's etc.

Assume I want to buy memory modules for the servers. In windows or linux there are tools to show specs, e.g. cpu-z. Otherwise I have to open chassis and see what is written on the memory modules.
Using RVTools you can export the vHost Tab and get the vHost model.
With that information you will have to do some googling around to see what are the correct RAM modules.
Another option, (and I think the best approach) is to access the hosts via remote console (ILO, IDRAC, BMC, etc) and over there you will have all your hardware information.
Eventhough the topic starter did not ask for tools that show this outside of ESXi. I fully agree with you. You should be able to see this on the ILO/iDRAC/OOB mangement console.
