Its not open source, but esXpress offers a free product that will do full backups. I have been using the Enterprise Edition for a while now and am quite pleased with it.

A good product could be Bacula, for example for VMware Server:

There is a newer Open Source tool called XSIBackup compatible with ESXi 5 series that allows programming of unatendded backups with automatic space provisioning when the backup disk is full and a complete e-mail report after each backup, it works on the hypervisor directly, you can find it here http://33hops.com/xsibackup-vmware-esxi-backup.html

There are a number of open source backup solutions that run within VMs (such as bacula) and there are a few open source solutions that run agent-less. The question in my mind is which do you want? Agent-less or in-VM?
