sure, you can do this. However if vCenter is running on a host in which you want to patch, you cannot use VUM. The host will have to be patched as a standalone Host.
I see no disadvantages other than not being able to use VUM. However, if you have a single host, why do you need vCenter? Why not just manage it with the vSphere Client?
